2 cups plain yogurt
6 tablespoons Dijon mustard
6 cloves garlic, minced or pressed
2 teaspoons ground ginger
Salt and pepper, to taste
1 3 ½ pound chicken, skinned
Instructions
Mix together the yogurt, mustard, garlic, ginger, and salt and pepper. Spread the mixture on the chicken, rubbing it in. Place in an ovenproof dish, cover, and let marinate in the refrigerator for at least 2 hours (preferably overnight).
Preheat the oven to 375ºF.
Bake the chicken, uncovered, for 1 hour or until it is brown and cooked through. Baste often.
