Muffins & Quick Breads

Apple Cranberry Muffins

Ingredients   1 cup rolled oats
1 cup plain yogurt
1/2 cup vegetable oil
3/4 cup brown sugar
1 egg
1 cup unbleached all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons grated orange rind
3/4 cup chopped cranberries
2 tablespoons granulated sugar
1 tart unpeeled apple (such as Granny Smith), cored and chopped
Instructions   Preheat the oven to 375°F.
Lightly grease a 12-muffin tin.
Mix the oats with the yogurt. Add the oil, brown sugar, and egg; stir to combine.
Sift in the flour, salt, soda, and baking powder. Add the orange rind and stir.
Toss the cranberries with the granulated sugar and stir them into the yogurt mixture. Add the apple and stir.
Spoon into muffin tins and bake for 15 to 20 minutes until muffins are lightly browned.
Remove from the tin and cool on a wire rack.

Yield: 12 muffins
