Apple Oat Crisp

Ingredients   4 apples, peeled and diced
3 cups old fashioned oats
1-teaspoon sea salt
3 eggs, lightly beaten
1-cup plain soymilk or plain rice milk
2 teaspoons pure vanilla
1/3 cup honey
½ cup organic apple butter
2 teaspoons cinnamon
½ teaspoon nutmeg
Instructions   Preheat oven to 350 degrees.
In a large bowl, combine oats, salt, and cinnamon, and nutmeg.
In another bowl combine honey, apple butter, vanilla milk and eggs.
Beat well, and then pour the egg mixture into the bowl of oats.
Mix well, add diced apples, and stir until combined.
Pour mixture into a 9 by 13 inch nonstick pan.
Bake for 35 to 45 minutes.
Cool to room temperature and cut into 2-inch squares.
