Cucumber Salad

Ingredients   3 large cucumbers
2 large tomatoes
½ small red onion
½ teaspoon dried basil
½ teaspoon dried dill
1 tablespoon chopped fresh parsley
Apple cider vinegar
Instructions   Peel the cucumbers, slice them in half lengthwise, scoop out the seeds.
Cut the cucumbers into bite-sized pieces.
Dice the tomoatoes, and finely chop the red onion.
Toss the vegetables together, then sprinkle with basil and dill and the fresh parsley.
Add enough vinegar to coat all the vegetables, and toss.
Chill before serving if possible.
This salad is quick to make and keeps well. It is low in fat and calories, high in fiber, and tastes great!
