Cold Greek Salad

Ingredients   3 cups shredded green cabbage
1 green bell pepper, julienned
1 cup English cucumber, julienned, peel on
3 medium tomatoes, wedged
1 cup sliced mushrooms
½ cup sliced black olives
1/3 cup crumbled feta cheese or freshly grated pecorino cheese
¼ cup extra virgin olive oil
Juice of 1 lemon
2-3 cloves garlic, minced
Sea salt and black pepper (or cayenne pepper) to taste
Instructions   Toss all ingredients together in a beautiful large serving bowl and enjoy.

Note:
You may use romaine lettuce in place of cabbage, but it will have to be eaten immediately, as it will not store well.
Also, this can be a main dish with the addition of diced cooked chicken breast or turkey,
or a 6 ounce can of drained, flaked tuna.
