Armenian Shish Kebab

Ingredients   2 cups plain yogurt
¼ cup red wine vinegar
3 large yellow onions, cut in large chunks
2 garlic cloves, crushed
Salt and pepper, to taste
2 ½ to 3 pounds boneless lamb, cut into 2-inch cubes
3 tomatoes, cut into chunks
1 eggplant, cut into chunks
3 bell peppers, cut into chunks
10-15 mushrooms
10 whole cloves of garlic, peeled
Instructions  

Mix the yogurt, vinegar, onions, garlic,
and salt and pepper in a large bowl.
Add the lamb.
Cover the bowl and marinate the lamb
for 2 hours at room temperature.

Place the lamb on skewers with chunks
of tomato, eggplant, bell pepper,
and mushrooms, and the cloves of garlic;
place on grill.
Drain the onion chunks that were marinated
and arrange them on the grill around the skewers.
Cook the shish kebab over a hot grill or barbecue.
Grill the onions until they are soft but
have crispy edges.
