1 cup barley
2 cups water
2 cups cubed cooked chicken breast
2 stalks celery, thinly sliced
½ cup thinly sliced water chestnuts
½ cup finely chopped red onion
1 cup plain yogurt
1 tablespoon fresh lemon juice
2 tablespoons soy sauce
¼ teaspoon black pepper
Instructions
Soak the barley in water for 2 to 3hours,
then bring the barley and water
to a boil in a large saucepan. Reduce heat and simmer, almost completely covered,
over low heat for 25 minutes,
until the barley is cooked through. Drain and allow to cool.
In a bowl, mix the cooled barley with
the chicken,
celery, water chestnuts, and onion. In another bowl, mix together the yogurt,
lemon juice, soy sauce, and pepper; pour the yogurt mixture over the chicken and barley mixture,
stir together, and serve.
