Chilled Cucumber Dill Soup

Ingredients   8 cucumbers, peeled and chopped
3/4 cup fresh parsley leaves
1/2 cup chopped onion
2 tablespoons chopped fresh dill
1/3 cup fresh lemon juice
1 quart buttermilk
1 pint plain yogurt
1 tablespoon salt
sour cream, to garnish (optional)
fresh mint sprigs, to garnish (optional)
Instructions  

Blend the cucumbers, parsley, onion,
dill, lemon juice, buttermilk, yogurt,
and salt in a food processor until smooth.
Chill for at least 1 hour before serving.
If desired, garnish with a dollop of
sour cream and a fresh mint sprig.

Yield: 10 servings
