Mexican Casserole

Ingredients   Crushed tortilla chips
Browned and drained hamburger (or sausage/chicken/pork)
1 can cream of chicken soup
1 can cream of mushroom soup
1 can RoTel tomatoes (undrained)
Grated cheese
Instructions   Put a layer of crushed tortilla chips in a 9 x 13 pan
(stale chips work nicely for this too).
Add the browned hamburger (or sausage/chicken/pork/).
Mix the soups, and undrained tomatoes together.
Pour soup mixture over the top two layers
Cover with grated cheese
Cover and cook in 350 oven until hot all the way through.
As an option, you can add a layer of cheese on top of the meat before
the soup/tomato mix goes on.

TipThis is better the second day, as the RoTel has time to flavour everything and spice it up.

Note:RoTel tomatoes are canned diced tomatoes and green chiles.
You can find them in varying degrees of “hot” and with additional flavours added in such as cilantro and lime.
