Hearty Cornbread

Ingredients   ¼ cup butter or margarine
1 cup cornmeal
1 teaspoon salt
1 teaspoon baking powder
½ teaspoon baking soda
2 eggs, beaten
1 cup plain yogurt
1 cup fresh corn
½ cup minced scallions (green onions)
½ cup chopped green bell pepper
1 cup grated Cheddar cheese
½ cup chopped pepperoni
Instructions  
Preheat the oven to 400°F.
Place the butter in a 9- or 10-inch ovenproof
skillet and leave it in the oven while
mixing the other ingredients.
In a bowl, whisk together the cornmeal,
salt, baking powder, and soda.
In a separate, large bowl, stir together
the eggs and yogurt.
Add the cornmeal mixture to the yogurt
mixture and stir to combine.
Add the corn, onion, bell pepper, cheese,
and pepperoni one at a time, beating
thoroughly after each addition.
Remove the skillet from the oven.
Pour the hot butter into the batter;
mix quickly, then pour the batter into
the hot skillet.
Bake for 40 minutes or until golden.
Cool in the skillet.

Yield: 6 to 8 pieces
