3 cups all-purpose flour
1/4 cup sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon caraway seed
4 tablespoons chilled unsalted butter, cut in small pieces
1/2 cup dried sweet cherries
1 cup plus 2 tablespoons plain whole milk yogurt
2 teaspoons turbinado sugar (a large grained sugar available at most natural foods stores)
Instructions
Preheat the oven to 425ºF.
In a large bowl combine flour, sugar, baking soda, salt, and caraway. Add the butter, and cut in butter using a pastry blender,
until the mixture is similar to coarse crumbs.
Stir in the dried cherries, add the yogurt, and stir
with a fork, until a stiff dough forms.
Gather the dough into a ball.
Turn the dough onto a lightly floured surface.
Knead for several minutes, then shape dough
into a 7-inch round.
Sprinkle with sugar.
Place dough on an ungreased cookie sheet.
With the tip of a sharp knife,
cut a deep cross in the dough. Bake until bread is a deep golden brown,
and sounds hollow when tapped, approximately 35 to 40 minutes. Place on a rack to cool.
Cool completely before you slice and serve.
