Breakfast foods

Mango Medley

Ingredients   2 cups water
3 cups mango juice, or mango flavored juice blend
1 tablespoon pumpkin seeds or sunflower seeds
3 tablespoons whole almonds, coarsely chopped,
or slivered almonds
6 dried apricots, chopped
1 mango, peeled and chopped
1/4 teaspoon Garam Masala (a curry-like spice blend
available in most natural foods or Indian and Middle Eastern markets)
2 cups old fashioned or quick cooking oats
3-4 tablespoons unsweetened coconut milk (optional)
1-2 8oz containers of apricot-mango yogurt
Instructions  
Combine the water and mango juice in a
3-quart saucepan and bring to a boil.
Stir in the pumpkin seeds, almonds, apricots,
mango, Garam Masala and oats.
Lower the heat to a simmer and cook for approximately 8 minutes
for old fashioned,
4-5 for quick, stirring occasionally.
Stir in the coconut milk if using, and serve the oatmeal in warm bowls.
Top each serving with a generous dollop of yogurt.
